The story
Hafla Hafla is an independent restaurant on Lark Lane. The building was a former off-licence. It was structurally basic, tight on space, with no existing commercial kitchen infrastructure. The operator needed an upmarket fit-out delivered to a fixed opening date. Opening behind schedule would have meant lost bookings, lost revenue and lost momentum.
We designed and installed the commercial kitchen as part of the principal contract rather than hand it to a parallel supplier arriving on a different schedule. That removed the coordination risk that delays most restaurant openings. The extraction route was tight, the footprint was small, and the specification was high. Our in-house joinery team delivered the interior elements on the same programme as the structural and M&E works. The restaurant opened to trade on the planned date.
